Rice is a main source of starch and carbohydrates in our food. It can be boiled or pressure cooked. Rice mixed with various spices and vegetables make a complete meal, but protein content should be added either from curd or grams and pulses. Rice made with non vegetarian ingredients are complete balanced food as protein is added from mutton, fish or chicken.
Rice are available in different quality. Basmati rice are considered on top of this list as they add mouth watering aroma in the dish. This quality produce a long and separate rice preparation. They take little more time to cook.
Other quality is kolam rice, which is slightly thicker. They cook fast and turn in to a paste if over cooked. They are easy to digest. This variety is mostly used in khichdi - a combination of rice and gram or in dishes which contains crushed rice.
Apart from this, there are many more variety of rice available in the market. Rice is polished to improve look and taste of the dish but in the process, fiber and vitamins are lost. So avoid use of polished rice as much as possible.
Rice can be full boiled, which is a better way of cooking or it can be cooked in excess water till done and then water is drained. This method is not considered as a healthy way of cooking as nourishment is lost while removing water.
