Mutton Biryani



Mutton biryani is a complete dish and a treat by itself. It can be prepared in various ways. It is a rich dish and you can make it less spicy by reducing the quantity of chilies.



Ingredients you will require for this recipe:

For mutton

Mutton : . . . . . . . . . . . . . . . . . . 3/4 kg

Potatoes (aloo) : . . . . . . . . . . . . . . . 2 to 3

Onions (pyaj) : . . . . . . . . . . . . . . . . . 5 to 7

Ginger garlic paste (adrak lasoon) : 3 table spoon

Green chilies paste (hari mirchi) : 1 table spoon

Red chili powder (lal mirchi) : . . . . 3 tea spoon

Cumin powder (jeera) : . . . . . . . . 2 tea spoon

Garam masala powder : . . . . . . . . 1 tea spoon

Tomato (tamater) : . . . . . . . . . . . . . . one

Dry plum (jardaloo) : . . . . . . . . four to five

Almond (badam) : . . . . . . . . . . . . . 10 to 15

Curd (dahi) : . . . . . . . . . . . . . . . one cup

Oil (rel) : . . . . . . . . . . . . . . . . one cup

Saffron (kesar) : . . . . . . . . . . . . . a pinch

Salt (namak) to taste

For rice

Basmati rice : . . . . . . . . . . . . . . 2 cup

Cardamom (big and small) (elaichi) : 2 to 4

Bay leaves : . . . . . . . . . . . . . . . 2 to 3

Oil or ghee : . . . . . . . . . . 3 table spoon

Salt (namak) to taste

Marinate mutton with ginger, garlic, chili and salt for four to six hours. Fry chopped onion to golden brown, crush it and mix it with curd and add it in mutton. Let it remain for one hour. Fry potatoes and mix it to marinated mutton. Now take one cup of oil and fry red chili powder, cumin powder and garam masala powder for a minute. Add chopped tomatoes, dry plum, almond and cook for another minute. Add mutton and mix it well. Add 1/2 cup water and cook till mutton is done.

Cook rice with cardamom, bay leaves and salt in 6 cups water till one boil. Remove excess of water. Now Take 3 table spoon of oil or ghee in a top and put one layer of rice. Put cooked mutton on top of it. Cover mutton with second layer of rice. Pour 1/4 cup of water. Sprinkle saffron on top of it and cover the top with lid. Seal mutton biryani with some dough and cook it on a slow flame for an hour.

Serve mutton biryani with raita and lassi.
