Rice Pulao





Rice pulao is rich in calories and a full meal on its own when taken with raita - a curd preparation. It is not very spicy, so increase the quantity of chilies, if you want to make it hot and spicy.

Ingredients we will require for this dish:

Basmati rice : . . . . . . . . . . . 2 cup

Onion (pyaj) : . . . . . . . . . . . . . two

Mustard seed (rai) : . . 1/2 tea spoon

Cumin seed (jeera) : . . . 1/2 tea spoon

Cashew nut (kaju) : . . . . . . . 50 gram

Almond (badam) : . . . . . . . . 50 gram

Bay leaves : . . . . . . . . . . . . . two

Garam masala : . . 1/2 tea spoon

Red chili flake (lal mirchi) : 1/2 tea spoon

Yellow capsicum (simla mirchi) : . . . . one

Oil (tel) : . . . . . . . . . . 3 table spoon

Butter (makkhan) : . . . . . . 1 table spoon

Lime juice (nimboo) : . . . . 1 table spoon

Salt (namak) to taste

Ingredients for raita :

Curd (dahi) : . . . . . . . . . . 500 grams

Onion (pyaj) : . . . . . . . . . . . . . one

Coriander leaves (hara dhania)

Green chilies (hari mirchi) : . . . . . . 2 to 3

Sugar (shakkar) : . . . . . . . 1 table spoon

Salt (namak) to taste

Pulao preparation : Fry onion in oil till they are just transparent and then add bay leaves, mustard seed, cumin seed, cashew nut, almond, garam masala, red chili flake, yellow capsicum and salt. Cook for two minutes and the add rice. Mix it well and add lime juice and butter. Cook for a minute and then add four to five cups of water and cook it till rice is soft.

Raita : Mix finely chopped onion and finely chopped green chilies in curd and add sugar, salt and coriander leaves.
