Chinese Fried Rice





Chinese fried rice is a good choice as main course. This recipe is not very rich or spicy. You may increase the quantity of chilies to make it hot.

Ingredients you will need to make this dish:

Basmati rice : . . . . . . . . . . . . . . . . . . . 2 cup

Onion (pyaj) : . . . . . . . . . . . . . (medium) one

Carrot (gajar) : . . . . . . . . . . . . . . . . . . . two

French beans : . . . . . . . . . . . . . . . 100 grams

Cabbage (patta gobi) : . . . . . . . . . . . . . 1 cup

Spring onion (hari pyaj) : . . . . . . . . . . . . . two

Ginger (adrak) : . . . . . . . . . . . . . . . . . . 1 inch

Garlic (lasoon) : . . . . . . . . . . . . . . . . . 7 to 10

Green chilies (hari mirchi) : . . . . . . . . . . 2 to 3

Capsicum (simla mirchi) : . . . . . . . . . . . . one

Black pepper powder (kali mirchi) : 1 tea spoon

Soy sauce : . . . . . . . . . . . . . . 1 table spoon

Lemon juice (nimboo) : . . . . . . . 1 table spoon

Oil (tel) : . . . . . . . . . . . . . 3 to 4 table spoon

Salt (namak) as per your taste

Method of making Chinese fried rice:

Soak rice in warm water for fifteen to twenty minutes and drain. Add lemon juice and salt. Add two glass of water and boil rice on slow flame till it is just done. Do not over cook rice.Remove excess water and add cold water and drain.

Now heat oil in wok and fry finely chopped onion till it is just transparent. Add finely chopped carrot, french beans, cabbage, ginger, garlic, green chilies and capsicum. Fry for two to three minutes and add cooked rice. Mix it well and add black pepper powder and soy sauce. Add salt as salt is washed out while draining rice. Cook it for two to three minutes.

Serve Chinese fried rice with green chilies (in vinegar) and soy sauce.
