Murgh Handi



Murgh handi is a spicy chicken dish with thick gravy. It is rich with calories and as a main dish, it can be taken with roti, chapati, paraths, nan or rice.



Ingredients you will require to make this dish :

Chicken (murghi) : . . . . . . . . . . . . . . 500 grams

Ginger garlic paste (adrak lasoon) : 2 table spoon

Tomatoes (tamater) : . . . . . . . . . . . . . . . 2 to 3

Curd (dahi) : . . . . . . . . . . . . . . . . . . . . 1/3 cup

Fresh cream : . . . . . . . . . . . . . . . . . . . 1/3 cup

Dry fenugreek leaves (kasoori methi) : 1 tea spoon

Red chili powder (lal mirchi) : . . . . . 1 table spoon

Green chilies (hari mirchi) : . . . . . . . . . . . 2 to 3

Black pepper powder (kali mirchi) : . . 1 tea spoon

Cumin powder (jeera) : . . . . . . . . . 2 tea spoon

Coriander powder (dhania) : . . . . . 1 table spoon

Garam masala powder : . . . . . . . . . 1 tea spoon

Flour (atta) : . . . . . . . . . . . . . . . 1 table spoon

Oil (tel) : . . . . . . . . . . . . . . . . . . . . . 1/2 cup

Ghee : . . . . . . . . . . . . . . . . . . . . . . . 1/4 cup

Coriander leaves (hara dhania)

Ginger julienne (adrak) : 1 table spoon

Salt (namak) as per your taste

Method of making murgh handi:

Marinate chicken with ginger garlic paste, red chili powder and salt for two hours.

Heat oil in handi (a type of top) and fry finely chopped onion till it is just golden brown. Add long cut green chilies and flour and fry for a minute. Add chopped tomatoes, cumin powder and coriander powder. Add little water and let it cook for a while till tomatoes are soft.

Now add marinated chicken, curd and dry fenugreek leaves. Mix it well and add black pepper powder and garam masala powder. Cover the handi and cook it for five to seven minutes. Add fresh cream and cook murgh handi till chicken is done.

At the time of serve, garnish murgh handi with ginger julienne (ginger cut in long thin match-stick like strips) and coriander leaves. Heat ghee in a small top till it smokes and pour it over.
