Rogan Josh - Mutton dish with gravy





Rogan josh is a mutton dish with spices. It is rich in calories. Reduce the quantity of chilies and increase the quantity of curd to make it less hot.

Green chili paste (hari mirchi) : 1/2 table spoon

Turmeric powder (haldi) : . . . . . . 1 tea spoon

Onion (pyaj) : . . . . . . . . . . . . two to three

Tomatoes (tamater) : . . . . . . . two to three

Bay leaves : . . . . . . . . . . . . . . . . 2 to 3

Cinnamon (dalchini) : . . . . . . . . . . 1" stick

Red chili powder (lal mirchi) : . . . 1 tea spoon

Oil (tel) : . . . . . . . . . . . . . . . 1/2 cup

Curd (dahi) : . . . . . . . . . . 1/2 to 3/4 cup

Salt (namak) to taste

Grind:

Whole red chili (lal mirchi) : . . . . 4 to 5

Grated coconut (narial) : . . . 2 table spoon

Coriander seed (dhania) : . . . 1 table spoon

Cumin seed (jeera) : . . . . . 1 table spoon

Poppy seed (khuskhus) : . . . . 2 tea spoon

Almond (badam) : . . . . . . . . . . 12 to 15

Peeled cardamom (elaichi) : 1/4 tea spoon

Pepper corn (akkha mari) : . . . . 1 tea spoon

Cloves (lavang) : . . . . . . . . . . . . 3 to 4

Marinate mutton with ginger, garlic, green chili paste, turmeric powder and salt for one hour. Grind whole red chili, coconut, coriander seed, cumin seed, poppy seed, roasted almond, cardamom, pepper corn and cloves to coarse granules.

Heat oil in pressure cooker fry onion till just transparent. Add bay leaves, red chili powder and ground masala paste and cook for a minute. Add cinnamon and chopped tomatoes. Cook till tomatoes are soft and then add curd and cook for a minute. Now add marinated mutton and cook for five minutes. Add one cup water and pressure cook rogan josh for ten to fifteen minutes.
