Navratan Korma





Navratan korma is a rich and full dish, with high calorie content. It is not very spicy as paneer, cream and milk is used in preparation. If you want to make it hot, increase the quantity of chilies.

Cauliflower (phool gobi) : . . . . 150 grams

Bottle gourd (lauki) : . . . 100 grams

Tomatoes (tamater) : . . . . . . . . . 3 to 4

Onions (pyaj) : . . . . . . . . . . . . 2 to 3

Ginger paste (adrak) : . . . . . . 2 tea spoon

Garlic paste (lasoon) : . . . . . . 2 tea spoon

Red chili powder (lal mirchi) : . . . 1 tea spoon

Turmeric powder (haldi) : . . . 1/2 tea spoon

Coriander powder (dhania) : . . . 1 tea spoon

Garam masala powder : . . . . 1 tea spoon

Fresh cream (malai) : . . . . . . . . . . 1/4 cup

Oil (tel) : . . . . . . . . . . . . . . . . . 1/2 cup

Cashew nut (kaju) : . . . . . . . . . 50 gram

Raisin (kishmis) : . . . . . . . . . . . . 50 gram

Milk (dudh) : . . . . . . . . . . . . . . . 1 cup

Ghee : . . . . . . . . 1 table spoon

Coriander leaves (hara dhania)

Salt (namak) to taste

Boil potatoes, carrots, french beans, cauliflower, cabbage, peas, capsicum and lauki in water till done. Boil tomatoes till soft and remove the skin. Fry cashew nut and raisin in ghee for a minute.

Heat oil and fry onion till it is just transparent. Add ginger, garlic, red chili powder, turmeric powder, coriander powder, garam masala powder and fry for a minute. Add fresh cream, fried dry fruit and milk and cook for five minutes. Add grated paneer, boiled vegetables and salt. Cook navratan korma for three to four minutes.

Garnish navratan korma with coriander leaves.
