Mix Vegetable Patties





Mix vegetable patties is a spicy vegetable starter dish. It can be served as a side dish. This preparation is fairly hot so adjust the quantity of chilies as per your taste.

Ingredients you will need to make this dish:

Potatoes (aloo) : . . . . . . . . . . 250 grams

Cauliflower (phool gobi) : . . . . . 50 grams

Peas (mattar) : . . . . . . . . . . . 50 grams

French bean : . . . . . . . . . . . . 50 grams

Carrot (gajar) : . . . . . . . . . . . 50 grams

Capsicum (simla mirchi) : . . . . . . . . one

Bengal gram flour (besan) : 1 table spoon

Green chilies (hari mirchi) : . . . . . . 2 to 3

Ginger paste (adrak) : . . . . . 1 table spoon

Mustard seed (rai) : . . . . . . . 1 tea spoon

Grated coconut (narial) : . . . 2 table spoon

Dry mango powder (aamchur) : 1 tea spoon

Red chili powder (lal mirchi) : 1 tea spoon

Garam masala powder : . . 1/4 tea spoon

Coriander powder (dhania) : 1 tea spoon

Lemon juice (nimboo) : 2 table spoon

Oil (tel) : . . . . . . . . . . 1 tea spoon

Oil for frying

Coriander leaves (hara dhania)

Salt (namak) as per your taste

Boil potatoes. Boil peas, finely chopped cauliflower and finely chopped french beans.

Mash potatoes and add lemon juice. Mash peas with a fork. Mix it and add grated carrot, long finely cut capsicum, boiled cauliflower and french beans. Add bengal gram flour, grated coconut, dry mango powder, red chili powder, garam masala powder, coriander powder, coriander leaves and salt. Mix it well.

Heat one tea spoon of oil in pan and fry mustard seed till it crackles. Add finely chopped chilies and ginger paste and fry for a minute or minute and a half. Add this temper to vegetable mix and mix it well. Make flat round patties (you can give triangular shape)

Heat oil in a frying pan and fry patties till golden brown. Serve mix vegetable patties with tomato ketchup.
