Broccoli Soup



Broccoli soup with cheese is a rich soup with benefits of broccoli and vegetables. This soup is very rich as cream and cheese is added but it is not very spicy. You may increase the quantity of chilies to make it hot.



Ingredients you will need for this preparation are:

Broccoli : . . . . . . . . . 250 grams

Carrot (gajar) : . . . . . . . . . one

Cheese : . . . . . . . . . 250 grams

Onion (pyaj) : . . . . . (small) one

Garlic (lasoon) : . . . . . . . 6 to 8

Vegetable stock : . . . . . 2 cups

Green chilies (hari mirchi) : one

Pepper powder : . . 1 tea spoon

Fresh cream (malai) : . . 2 cup

Butter (makkhan) : . . 75 gram

Flour (atta) : . . . . . . 1/4 cup

Salt (namak) as per your taste

Heat half of butter in a large pan and fry finely chopped onion till it is just transparent. Add finely chopped green chilies and garlic and fry for a minute. Add flour and saute for two to three minutes. Add vegetable stock, chopped broccoli and salt. Mix it well and cook on low heat till broccoli is soft.

Blend this soup with a blender to make a smooth liquid and then add cream.

Heat the remaining half of butter and fry grated carrot for one to two minutes. Add this to the soup and add pepper powder and cook the soup for couple of minutes.

Add grated cheese while serving broccoli soup.

To make vegetable stock, either use readily available vegetable stock cubes or boil any three vegetables with little turmeric powder, ginger paste and salt.
