Vegetable Vadi





Vegetable vadi with carrots and peas is a simple dish containing protein. It can be taken with roti, paratha or chapaties. This preparation is not very rich and hot but as per your choice, you can slightly increase or decrease quantity of oil and chilies.

Vadi is readily available in market, which is made from crushed black gram and spices.

Ingredients we will need to make this dish:

Vadi : . . . . . . . . . . . . . . . . . . 150 grams

Carrots (gajar) : . . . . . . . . . . . . . . 2 or 3

Peas (mattar) : . . . . . . . . . . . . . . 1/2 cup

Spring onion (hari pyaj) : .. . . . . . . . 5 to 7

Tomatoes (tamater) : . . . . . . . . . . . two

Ginger (adrak) : . . . . . . . . . . . 1 tea spoon

Coriander powder (dhania) : 1 table spoon

Cumin seed (jeera) : . . . . . . . 1 tea spoon

Red chili powder (lal mirchi) : 2 tea spoon

Turmeric powder (haldi) : 1/2 tea spoon

Garam masala powder : 1/2 tea spoon

Aamchur powder : . . . . . 1/2 tea spoon

Asafoetida (hing) : . . . . . 1/4 tea spoon

Coriander leaved (hara dhania)

Oil (tel) : . . . . . . . . . . . . 2 table spoon

Oil for deep fry

Salt (namak) to taste

Fry vadi in oil and soak it in water.

Heat oil in a pan and fry chopped onion bulbs for two minutes. Add ginger and cumin seed and fry for half a minute. Add red chili powder, coriander powder, turmeric powder, garam masala powder, aamchur powder and asafoetida. Fry for half a minute and then add chopped carrots and peas. Cook it for two to three minutes and add tomatoes and coriander leaves.

Saute it for two minutes and then add soaked vadi (squeeze out excess water). Cook vegetable vadi till carrot and peas are done. Add chopped spring onion leaves on top.
