Veg Masala





Veg masala is one of a very popular Punjabi vegetable recipes with a flavour of fenugreek. This preparation is with roughly cut vegetables, known as 'khada bhaji'. This is very rich and spicy version, and reduce quantity of oil and chilies as per your taste.

Ingredients we will need to prepare this dish:

Carrots (gajar) : . . . . . . . . . . . . 100 grams

Potatoes (aloo) : . . . . . . . . . . . 100 grams

French beans : . . . . . . . . . . . . 100 grams

Peas (mattar) : . . . . . . . . . . . . . . 3/4 cup

Cauliflower (phool gobi) : . . . . . . 100 gram

Capsicum (simla mirchi) : . . . . . . . . . one

Tomatoes (tamater) : . . . . . . . . . . . . two

Spring onions (hari pyaj) : . . . . . . . 3 to 4

Ginger (adrak) : . . . . . . . . . . . . . . 1 inch

Garlic (lasoon) : . . . . . . . . . . . . . . 6 to 8

Fenugreek (methi) : . . . . . . 1 table spoon

Green chilies (hari mirchi) : . . . . . . 2 to 3

Red whole chilies (saboot lal mirchi) : . . 2

Red chili powder (lal mirchi) : 1 tea spoon

Turmeric powder (haldi) : 1/2 tea spoon

Garam masala powder : 1/2 tea spoon

Curd (dahi) : . . . . . . . . . . . . . 1/2 cup

Coconut oil (narial ka tel) : . . . 1/2 cup

Coriander leaves (hara dhania)

Salt (namak) as per your taste

Heat oil in a pan and fry finely chopped bulbs of onion for one minute. Add fenugreek seed, crushed ginger, crushed garlic, whole red chilies and long cut green chilies. Saute for a minute and then add chopped tomatoes, red chili powder and turmeric powder. Add chopped carrots, potatoes, french beans and cauliflower.

Cook these vegetables till veg masala is half done and then add chopped capsicum, peas, garam masala, curd and salt. Mix it and cook on slow flame till done. Add chopped spring onion leaves on top while serving veg masala.
