Mutton Boti



Mutton boti (or boti kabab) is a grilled starter dish. It is not very rich in calories but it is spicy.



Ingredients you will need to make this dish:

Bone less mutton (gost) : . . . . . . . . . 500 gram

Raw papaya paste (papeeta) : 2 to 3 table spoon

Ginger paste (adrak) : . . . . . . . . . 1 table spoon

Garlic paste (lasoon) : . . . . . . . . . 1 table spoon

Green chili paste (hari mirchi) : . 1/2 table spoon

Red chili powder (lal mirchi) : . . . . . 1 tea spoon

Turmeric powder (haldi) : . . . . . . 1/2 tea spoon

Garam masala powder : . . . . . . . 1/2 tea spoon

Butter (makkhan) : . . . . . . . . . . . . . . 1/3 cup

Onion (pyaj) : rings for garnishing

Mint leaves (pudina)

Lemon (nimboo)

Salt (namak) as per your taste

For basting juice : Mix 1/2 tea spoon pepper powder, 1/2 tea spoon red chili powder and 1 table spoon lime juice in 3 tea spoon ghee.

Cut bone less mutton in 1 inch cubes. Marinate it with raw papaya paste, ginger, garlic, green chili psate, red chili powder, turmeric powder, garam masala powder and salt for four to five hours.

Now heat butter in pressure cooker and add marinated mutton. Saute for two minutes and then add one cup of water and pressure cook for fifteen to twenty minutes. Open the cooker after the pressure is reduced and cook till all water is evaporated.

Fix mutton cubes on grilling rod and grill it in a pre heated oven. Apply basting juice while grilling.

You can also grill it on open charcoal fire.

Serve mutton boti with onion rings, mint leaves and lemon.
